What do you need?

  • Meat: Legs of chicken, without the skin.
  • Yogurt
  • Lemon
  • Tandoori Masala
  • Optional:
  • Butter: For smearing
  • Onion: for garnish
  • Lemon: for garnish
  • Chaat Masala

How to cook

Depending of the premix spice (Tandoori Masala) one uses, the recipe changes slightly. Usually, the masala is mixed well with little bit of lemon juice and oil. The chicken is then coated with the masala and left for marination. After about an hour or so, the chicken is coated with yogurt and kept in fridge for 3-4 hours at least. 12 hours is recommended. It is also possible to freeze the marinated chicken for later use :)

Once marination is done, cook it in oven (convection) at 190 °C for about 40 minutes in one side and about 20 minutes in other. The time will vary based on the size of the chicken legs and the oven. It is recommended to keep checking. One can smear butter while turning the chicken. Also, additional grilling will add some nice colour and smokey aroma.

Garnish with fresh onion rings, sprinkled with chaat masala and lemon wedges. Some prefer mint chutney as a sauce.
